Earlier this year I made that corn cake, but embellished it with pickled
chiles on the side. On top, I put coriander-crusted bacon, a little dollop
of maple foam, and a sprinkling of crispy deep-fried shredded onions.
The corn cake was good all by itself, but with that other stuff - WOW!
