Default Boiling, poaching, simmering, and killing germs

And tough too. Thats why you never let it boil when poaching and if you
turn it off and let the residual heat finish it you also get moist
chicken. Thats the way they prepare it in Chinese and
Mexican places where cooked chicken is used in dishes.
