Tortellini Salad
A while back a tortellini salad recipe was requested.
I have one that I make but don't have any real amounts as I have
always made it based upon what I have on hand and who will be
eating it, their likes and dislikes.
If I use the dried box tortellini I make it up a day or so before hand to
give the cheese time to soften in the refrigerator. The last time I
made it I included the following ingredients:
Green pepper, cut in small pieces
Red onion, cut in small pieces
Sliced black olives
Sliced green olives
Pepperoni
I prefer to use the "stick" pepperoni slice it a little think say about
1/2 inch and then cut that piece into 4 pie shaped wedges but the
pre-sliced works too but for some reason I get more "wows" with the stick
type. I use an Italian dressing that I like, but not the ones that are
heavy in oil/vinegar. Mix it all up and let sit in the refrigerator.
Just before serving I will add a little more of the Italian dressing
because this salad will soak up the dressing and become dry. This is
generally the way I fix it but sometimes I add other things that I might
have on hand such as sliced mushrooms or red peppers, or small chunks of
cheese such as the flavored cheese with jalapenos. I have tried using
mozzarella but it gets lost. I'm sorry this is so late, we've been tied
up with family stuff for ages and just got through with it, I hope.
