It's really a coincidence that you should mention this. When we lived in
the Cleveland area, we used to frequent a corner Greek joint that had
wonderful pancakes. What I remember most about them was that they were not
overly thick, were very tender, and very golden on the inside. I knew they
were probably from a mix, but never knew which one. Only after moving to
AZ did I wish I had asked what they used.
