Default Plum wine question

I'm new at wine making, I started a batch of plum at start the must
was 1.083 - 11% alcohol I left the must in vat for 7 days now have a
reading 1.000 - 0% I did the math should be 11% alcohol , Should I
add more sugar or just leave it be.
