Jack Keller has a recipe, but the exact link isn't working right now.

The main thing I remember about it is that he says that it will turn
brown on pressing no matter what you do. To counter that, you need to
let the juice cold settle for a few days. The brown stuff will settle
to the bottom and you can rack it and proceed with starting
fermentation.
