Sandy, here are two recipes from my cookie press recipe book. I make both
of these every year at Christmas, and they go over very well.

QUICK-MIX SPRITZ

Time: 10-12 minutes
Temp: 375°F
Yield: 5-6 dozen

2 1/4 cups sifted all-purpose flour
3/4 cup sugar
1/2 teaspoon salt
1/4 teaspoon baking powder
1 cup butter
1 egg
1 teaspoon vanilla

1. Sift flour, sugar, salt, and baking powder together in a bowl.
2. With a pastry blender or two knives cut the butter into the dry
ingredients until mixture is full of very fine lumps. It will resemble pie
crust or biscuit mix, although not as coarse.
3. Measure egg in a measuring cup. A large egg will measure 1/4 cup. If
it does not, add water to the 1/4 cup line.
4. Add the egg and vanilla and beat the mixture very well.
5. Fill cookie press. Form cookies on ungreased cookie sheets. Bake.
6. Remove at once to cooling racks.

CHRISTMAS TREES

Time: 10-12 minutes
Temp: 375°F
Yield: 6-7 dozen

1 cup butter
3/4 cup sugar
1 egg
1 teaspoon almond extract
1/4 teaspoon salt
2 1/4 cups sifted all-purpose flour
1/4 teaspoon baking powder
Green food coloring

1. Cream butter and sugar well. Beat in egg and almond extract.
2. Gradually blend in dry ingredients which have been sifted together and
tint dough with a few drops of green food coloring. Mix well.
3. Fill cookie press. Form cookies on ungreased cookie sheets, using tree
plate (usually included in a cookie press set).
4. Decorate with tiny candies. Bake
5. Remove at once to cooling racks.
