Of course they are going to reuse the same wrap many times, and
handling plastic wrap is a great way to cross contaminate... like
sharing used condoms... but it's best that the meat be exposed to the
air, most of the toxin producing organisms do not reproduce as
actively when exposed to oxygen. Each deli meat should be placed on a
plastic tray that is set at in incline so that it's not sitting in its
own juices... and only one piece of meat to a tray. Deli clerks are
not supposed to be talking while handling food, especially not at the
slicing machine... yoose may not mind but I don't like my bologna
sandwich coated in strange spittle.
