It would work when the power goes out.

In the very near future (date varies by region),
rolling blackouts will become common in North
America during the hottest days in summer and
coldest days in winter, due to the lack of
investment in our electrical infrastructure.
Since deregulation, the incentives have been
inverted -- it used to be that utilities owned
the infrastructure from the generators to the
customer's service line. Now, generation and
transmission are operated by separate companies,
and they make more money during high spot market
prices when there's a crisis.

Of course, when the rolling blackouts start,
you'll probably have bigger problems than making
salad.
