Wilted Cucumbers and Onions
1/2 cup vinegar
2 Tbsp water
pinch of cayenne pepper
salt and pepper to taste
1/4 cup sugar
Mix and bring to a boil so the sugar gets dissolved. While hot pour
over:
2 cucumbers thinly sliced
1 onion thinly sliced
Put in a sealable container and refrigerate overnight or all day.
I use Splenda in this recipe.
My husband loves this so much that I increase the dressing by 6X and
use a large bowl of onions that I cut in half from top to bottom and
then slice them in the food processor.
