Default It was supposed to be...


I started out wanting to make Chicken Tortilla soup but it's not what
I ended up with.
Getting the ingredients ready.
1 med onion, 2 cloves garlic, scant 1/2 tsp applewood smoked chipotle
powder, 1/4 tsp cumin, diced tomatoes, chicken and a 1/2 tsp salt.

After the onion and garlic was sautéd I added the tomatoes and some of
the chilis I brought back from New Mexico. and about 2 cups of chicken
broth.

I wanted a smoother soup so I hit it with the stick blender a little.

I added too much chili and it was too hot. It was tasty enough just
hot. I should have used less of each.
What to do. I had some leftover cannelloni beans in the fridge, about
3/4 of a can with their juice, so I smashed them and added them to the
pot. It worked great, there is still pleanty of heat and spice, just
not overpowering like it was.

I didn't have enough chicken so I added some shrimp also.

I had some pizza dough in the fridge so I decided to make some kind of
bread. I rolled out the dough and pushed it around to fit in the
toaster oven pan and sprinkled it with some fresh ground sea salt and
fresh ground black pepper.
It turned out really darned good.

So, not exactly chicken tortilla soup but it turned out fabulous and
I'll make it again for sure.
