Valuable as many of Wayne's contruibutions have been, I kind of choked
on this, too. Political boundries do not a cuisine make. All of
California, Nevada, Utah, New Mexico, Arizona, and Texas, and a good
deal of Colorado and Wyoming were orignially part of the Mexico of the
time. (mid 1800s). The Gadsten Purchase brought an additional 10,000
sq. miles of NM and Arizona. So is all food in San Francisco
"Mexican"?
