Zucchini With Garlic, Roasted Red Peppers And Chives
Serving Size: 4
2 roasted red bell peppers, chopped
4 cloves chopped garlic
4 tablespoons chopped fresh chives
5 fresh basil leaves, thinly sliced
2 tablespoons extra-virgin olive oil
balsamic vinegar to taste
salt to taste
4 zucchini, diced or cut into bite-size pieces
Mix peppers, garlic, chives and basil to taste and the olive oil. Season with
vinegar, salt and pepper. Set aside. Steam zucchini until tender-crisp, about 5
minutes. Drain well. Add the zucchini to the bell pepper mixture and toss
well. Serve immediately.
