easy wine from scratch
 
Hey all,

I've made 4 or 5 wine kits thus far and they came out really well...and they
have definately sparked my interest in trying to make a wine from scratch.
What is a good recipe for a first timer to try? I would like to make some
kind of fruit wine preferably. I'm going to try a blueberry one when the
berries come out at the end of summer, but i want something to try now for
something to do. All suggestions appreciated!

these recipes are for 1 gallon batches, Just multiply times how big a batch
you want.

You might try Jack Keller's recipe for Welch's Frozen white grape juice. It
makes a very nice wine and it is excellent to blend with fruit wines that
end up needing a bit of vinuosity so it would give you something to work
with when you make your fruit wines. Fruit wines should be made from what
is in season in your area.

Now is the time of year for...

rhubarb wine. only use fresh garden stuff though. Do not try to use
the hothouse stuff they sell in grocery stores.

dandelion wine - a bit labor intensive though

Rhubarb wine comes out better if you freeze the rhubarb for a few months -
helps break down the rhubarb which is a very hard fruit.

I use the sugar extraction method followed by several pressings (witha
basket press) and 2-3 rinsings. It is amazing how much flavor is in
that stuff, it is just hard to get to.
