Fermentation help
 
Hi everyone

I need some assistance. I live in Calgary, Alberta.
I have noticed that the fermentation process in very quick. In a 6-week kit,
the instructions you should reach Stage #2 in 10 days. In 7 days ALL
fermentation has stopped and the specific gravity is already at 0.990 which
would be well into Stage 3 (Day 24 in the instructions)

What am I doing wrong?
Should I go ahead with stage 3 anyway even if it it only has been 7 days?

You probably fermented a little warmer than usual, so your scheduled
timeline is out the window. No problem.

Not sure what kinda grapes or kit you have, but for me Vitner's Shiraz
kit did the same thing to me. I kept to schedule and it turned out
great. I also did a Selection Pinot Noir and fermentation ended faster
than I thought it should, but the hydrometer told me it had done what it
was suppose to do (reaching specific gravity in instructions), and was
told all is good. Kits are like this, I guess. I still stir'd the crap
out of it when instructed to get the CO2 out.
