AIUI, the term "racking" means transferring liquid from one container
(or set) to another container (or set), so it includes both
intermediate racking stages for sediment removal and clarity *and*
bottling (racking into bottles).

Right or wrong?

OTOH, the OED defines "rack" only as the first thing I mentioned: "To
draw off (wine, cider, etc.) from the sediment. Also with 'off'."
