Newbie question about secondary length
 
I am currently making a VIOGNIER Brew King's Vintners Select kit.
I racked my primary to secondary and according to the instructions, I
should wait 10 days before stabilizing. Would any harm be done if I
were to wait 15 or 16 days before stabilizing the wine. Stabilizing
for this kit consists of adding metabisulphite, sorbate and isinglass
to the wine. Also, does anyone have any other suggestions regarding
this wine kit? I usually brew beer and this is my first foray into
winemaking.

There would not be any harm in stabilizing 15, 16 or 45 days later
than recommended in the instructions... Those are minimum times in the
instructions.
