thinning the vine in spring

I've learned that I need to thin the new growth from my plants. New growth
looks most robust all along last years wood [this is season #2 for the
plants]. The older wood has sent out healthy shoots and I plucked some off
already. The wounds are keeping the wood wet. Do I need to do something
about that? Should I wait longer to continue to thin the growth? Also, can
I propagate new plants from greenwood or should I do so only from pruned
hardwood? I am in Long Island, NY.
