I was always curious. Why do we use plastic for primary fermenters and
glass for secondaries?

It is hard to find large glass buckets that are open at the top so you can
work with the fruit. Also food grade plastic is cheaper and a bit less
breakable. Glass would be better but I want my primary to be open at the
top. Stainless steel is great if you can afford 10 gallon stainless
buckets.
