I do. I've thought of making a few wide wedges for the bottles to rest on
all the time so sediment would tend to go to the low spot.

Tipping The Bottle
 
It seems so obvious to do so that most of us probably never mention it. I
generally try to find a book that relates in some way to the type of wine.
Silly but I do. Sometimes I have to stretch.

Great idea - I always tip, but never prepare for it. I am always scrambling
at the end to find a bag of corks or something else to prop my carboy up. I
should just get some dedicated wood shims for this. It sure would be easier.

I have found myself tipping bottles but not while racking. Usually
just while sitting around relaxing. ;)

I think we all do it and it's not a matter of right or wrong, it's a
matter of not wasting wine. I'm like everybody, I find whatever works
to keep the carboy tilted, if I can't find anything, I'll sacrifice
myself and hold it if I have to. Every drops count. Plus, when you
rack, the more you get in the next carboy, the less it has to be
topped.

Tipping The Bottle
 
I use a 3/4 inch X 1.5" X 4" plywood block. I lay the block flat under
the back of the bottle during fermentation. When racking I gently
move the block to the front of the bottle. When the bottle is 3/4
emptied I turn the block on edge so that it is lifting the bottle
1.5". I have never had any trouble with stiring up the lees. This
method leaves most of the sediment on the bottom of the bottle. I
move my bottles up to the top shelf for fermenting, saving me from
having to move them when racking. I only have to rotate the
block,remove the fermentation lock, and siphon. Love it :-)

I always tip and never prepare either; I just use the airlock with
stopper to tilt. I have lumber all over the place and say I'm going
to cut a 2x4 for this each time I rack, but never get around to it.
It's one of those roundtoits that you can never get to.

That is what I do. I have some round sections of a pecan tree cut into
circular wedges. We always tip the carboy. Additionally, I always have
several sanitized, clear bottles on hand so that the last, final, nasty ,
dreggie bit of a racking can go into the sanitized bottle then into the
refridge for settling and later disposition (we have a small diameter siphon
the siphons directly from the dregg bottle to a glass).

What we haven't done is prop up the bottle the night before, but it sounds
like a great idea.

It does seem like a good idea, Nick, but I've never done that. I do tip the
jar slightly during racking. The thing is that you'll probably rack a
couple of times before bottling so very little sediment will be in the jar
by that time, anyway.

Tipping The Bottle
 
Just a technical analysis of tipping at the time of racking or while the
stuff is settling.

This is not easy without pictures, but the sediment will settle to the
bottom and form a level layer. If you tilt before hand, then it will still
form a level layer, it will just be tilted with respect to the carboy. In
other words the sediment will settle level with the horizon, not the carboy.

Now when you rack you want the siphon tip to be a half inch or so above the
level of the sediment so it does not draw any into the tube. If you
pre-tilt, that means that when the surface of the liquid gets to the bottom
of the carboy, it will be 1/2 inch above the sediment over the entire
surface. This is the same as it would be if you did not tilt at all.

But if you do not tilt until you are ready to rack and you tilt the side
opposite to the tip of the siphon hose up by 1/2 inch then the surface of
the liquid will reach the surface of the sediment on the opposite side and
still have 1/2 inch at the siphoned hose tip. This will cut the liquid left
by 1/2.

I general tilt a little more than 1/2 inch and find that not too much
sediment is stirred up as the liquid surface passes the surface of the
sediment. But if you tilt it too much you will get some.

I hope this is at least somewhat clear. If there is a flaw in my thinking,
let me know.
