No, quite the contrary. Aging on lees often improves mouth feel, the color
of white wines and overall wine quality, so experienced winemakers often
bulk age on the lees. But, lees can decompose and cause problems with off
odors. Careful attention is needed, so novice winemakers are often advised
to rack off the lees promptly.
