Degassing
 

Hello All -

Quick question here about degassing. I have a degassing wand that under the
instructions should not be operated over 1200 RPM - no problem. My question
is which of these two options is better -

1.Operate the drill at a lower speed (550 rpm) which will allow it to be in
the wine for the 15 seconds in the instructions or

2.operate the drill at high (1000 rpm) which i can only do in 3-4 sec bursts
before a vortex starts to form (which i obviously don't want)


I know the real answer is 3.) which is to age the wine to naturally degass
in a glass carboy but due to the amount of space in my apartment just isn't
possible yet (i'm working on it)

Jason,
Does your vortex ever seem to explode out of the carboy? It
seems that everytime I've operated my fizz-stick at high speed
I can form this vortex and it seems to take on a life of it's
own. At that point I can't stop it from foaming out of the
carboy. I've often felt there was some sort of strange fluid
physics involved here.

On the high speed it will go fine for about 2 seconds, then i do definately
feel a hard pull then the vortex starts....at the low speed i've been
getting little bubbles slowly rising which lends me to believe that that is
the way to go and never a vortex

Degassing
 

Try reversing the drill as the vortex begins to form. Then when it
forms the other way, reverse again.

Degassing
 

The instructions that came with it are adament about not changing directions
while the wine is moving or too much air would be introduced. The low speed
seems to have done the job.
