Can anyone tell me what is the proper temperature and humidity for a whine
cellar?

I was at a premium winery in Sonoma and got this reponse....
55 degrees F
85% humidity.

Also important is the fluctuations in temperature. Ideally no deviation.
45 - 65F is acceptable to most. Rapid fluctuations are not allowed.
