Plum wine question

Leave it.
We make wine for the joy and taste not to produce high alcohol. If looking
for higher % add sugar before adding yeast. This will bring up the SG
1.080-1.095 is normal range for most wines.

The formula I use to calculate alcohol percentage in the finished wine is

(Starting SG - Ending SG) / 0.736

With your numbers, this gives 11.28%, which is a reasonable alcohol level.
I'd leave it as is. When I first started making wine, I aimed for a higher
alcohol content but found that my wines tasted better in the 11% to 13%
range; less harsh alcohol bite.
