Champagne is an Italian Discovery
The note in tha issue:
...... " The activities of the Benedictines Monks spaced in multiple fields. As an example in viticulture there is an actual discovery in a Benedictine Code called "Salubri potu dissertatio" dated 1621 that quotes Medieval agricultural techniques, written by the Benedictine Monk Francesco Scacchi born in Preci but Fabrianensis as it had been ordered there. This old book speaks about a fermentation technique of grapes in the bottle with a detailed exposure, and this fact is very important because a Monk in the area knew the champenois method, that is to say Champagne production approximately 50 years before its historical discovery, attributed to the French Benedictine Monk, Dom Perignon. So it seems that Dom Perignon took this procedure known in our area. There exist 6 copies of this code one which is kept at the industrial giant of Italian sparkling wines, Lunelli, and another copy at a local prestigious wine maker called Valentini. last one wrote also a book on wine titled "Covered in Umbria" in which he illustrates this recent discovery.
