Default Forgotten A Wine Term - Please help.

Hi guys

I've forgotten the term for making dessert wine by drying grapes before they
are crushed.
I had one by the name of Monte del Fra Recioto della Valpolicella Classico
lately.

Passito in Italian, Vin de paille in French, Strohwein or Schilfwein
in German, what do you want?
