Vegetarian Thanksgiving
 
Anyone care to share their menu and/or favorite recipes for
Thanksgiving?

I'm buying my tradtional Tofurky; just love it. This year though, I'm
just going to buy the roast, not the whole dinner thing. I do NOT like
their fixings; I'll make my own, thank you.

Unfortunatey, my husband and son want the "real thing" so I'll be
purchasing an already made dinner since I could not, in a million
years, cook a turkey! Too heinous to even think about.

Our favorite is a pie made with cooked brown rice, broccoli, onions,
carrots, celery, nori, tamari, between crusts.

Vegetarian Thanksgiving
 
I love an excuse to make this fake turkey. To me, it tastes millions
of times better than the store bought Tofurky, plus you get the
satisfaction of making something yummy :)

Oh let's see...

Small gathering so no big turkey. Just [separate things - ed]
for the omni's and a qorn (did I spell that right? [it's Quorn[tm] - ed])
loaf for the rest of us. Other than that; mashed 'taters, sweet 'taters,
green bean casseole, bread stuffing, sweet bread rolls, two relish
plates, and of course a pumpkin pie and cheese cake for desert.

Vegetarian Thanksgiving
 
This is the very best turkey/dressing recipe we have come across!!! It is
served at our Centers every Thanksgiving called "No Tom Turkey". Everyone
loves it! The great thing about this recipe is that everything is in it.
And you really only need some gravy and cranberry sauce to make it a
complete Thanksgiving treat.

No Tom Turkey
2 c. long grain brow rice
4 T. powered vegetable broth
2 T. oil
3/4 c. wild rice
1 tsp. ea. sage, rosemary, thyme
5 T butter
1 onion, diced
5 stalks celery
1 tsp. dill
2 tsp. onion salt
1 lb. mushrooms
2 tsp. garlic powder
1 tsp. thyme
1 lb. seitan
1 lb. Monterey Jack cheese, grated
16 oz. Pepperidge Farm herb stuffing
salt & pepper to taste
5 tsp. poultry seasoning
optional: pecan halves

In a sauce pan, add rice, broth powder and oil. Cook about 4 minutes.
Place mixture in 4 c. boiling water and cook for an hour or until water is
absorbed. Place wild rice, sage, rosemary, thyme and 1 T. butter in 1 1/2 c.
water and cook an hour.
Sauté onion, celery, dill and onion salt in 2 T. butter. Slice and sauté
mushrooms, garlic powder and 1 tsp., thyme in 2 T. butter until soft.
In a large bowl, combine all ingredients. Add seitan, cheese, herb
stuffing, salt and pepper to taste and poultry seasoning. Mix thoroughly. In
a baking pan, shape mixture like a turkey or whatever you like, garnish with
pecan halves and bake 30 - 45 mins at 375 degrees F. Serve with cranberry
sauce and gravy.
