Default Chocolate tofu pie

Chocolate Tofu Pie

* 1 block silken tofu
* 1 regular size bag of semi sweet chocolate chips
* 1/4 cup strongly brewed black coffee
* 1-2 tablespoon vanilla flavoring
* graham cracker pie crust
* fresh raspberries (optional)

Directions:

1. Melt chocolate chips in the microwave or on stovetop.

2. Blend together: tofu, chocolate chips, coffee, and vanilla.

3. Pour into graham cracker crust and chill 1-2 hours in the freezer, or 4 or more hours in the refrigerator.

4. Garnish with fresh raspberries when serving.

Serves: 8

Very exciting way to eat tofu. Easy to do and sounds delicious too. Will have to try this out.

I just made this the other day, and oh so good...

1 package of firm silken tofu (i used mori nu)
1 cup of vegan chocolate chips
1/4 cup maple syrup
1/4 cup rum
1 tsp. vanilla
*Puree the tofu, rum, maple syrup and vanilla until very smooth and creamy
*Melt the chocolate chips and combine with the tofu mixture. Make sure to mix well.
*Pour into crust and chill.

You can use a graham cracker crust, or make one out of crushed walnuts with a little flour and sugar (press into pie pan and bake, then cool before filling.)
