Is it me?

I mean, "Why do these beautiful eggplants emerge from my grill with the most
gawdawfull strings of dark seeds?"

I can't believe that they can be easily removed while leaving any decent
amount of flesh.

I am obviously conflicted here. Can anyone set me straight on this or
recommend a vegetarian psychologist?

I just leave them in. They're not hard or unpleasant. Once you've
mashed or pureed the aubergine with the other ingredients, you
probably won't notice them at all.

....

Eggplants come in two types, some label them male and female, one
difference being the number of seeds. The ones with the least seeds
are longer, cylindrical, and have a conical blossom end. The rounder,
tear-drop shaped ones have more seeds.

Just eat them. If the color really bothers you that much, wear a
blindfold or douse them in a dark sauce for camouflage.
