Are beet tops ok to eat?
 
I'm growing red beets. Are the leafy tops good for you to eat? Do you
eat them?

Yup. When you thin out the young beets, cook them whole with
tops and all. add a little cinnamon. Mature greens can be
prepared like any bitter greens, maybe with a little salt
fatback... oops, wrong group 8-/

Yep. You can cut a few while your beets are growing and they'll grow
right back.

I steam them then drizzle vinegar over them and salt and pepper to
taste.
