Beets
 
Like Taemon, I received a lot of something in my vegetable subscription that
I don't know what to do with - beets. Anyone have any good ideas what to do
with beets aside from borcht?

I used to have a great recipe for beets, but I can't find it :-( It
involved a little chopped onions, some oatmeal and copious amounts
of... peanut butter. Make into balls, fry. I know it sounds weird but
it was perfectly balanced out. Of course, now I don't know the amounts
:-( Feel like experimenting? ;-)

A couple of days ago I placed a recipe called "Beets and their
greens". Maybe that is to your liking.

Hmm, that does sound odd but also intriquing. Maybe worth experimenting
with.

I have to say that beets are not among my favorite vegetables. There are
only two occasions that I can remember actually appreciating beets. The
first was as a dinner guest at the home of some Polish friends. They served
borcht as a first course that was truely incredible. The second was at a
restaurant where a beet reduction sauce was served as a condiment for
grilled salmon (many years ago). As I write this, I realize that the borcht
and beet reduction sauce are very nearly the same thing. Both were made with
white wine. Maybe I'll search for an authentic borcht recipe and try making
that....

Thanks, I saw that. Unfortunately, these beets came without their greens and
so that recipe is out of the question.

Beet Subji
Vegetables - Beetroot -

INGREDIENTS

* 4-5 beets
* 2-3 t of oil
* 1/2 cup of peanuts, coarsely powdered
* 1/2 t of mustard seeds
* 1/2 t of chilli powder and / or 2-3 red chillies (vary by
tolerance!)
* Salt to taste

METHOD

Grate the beets and set them aside. Heat the oil in a frying pan, add
the mustard seeds, and wait until they start to sputter. Throw in the red
chillies (if any) and fold in the greated beets. When the beets are about
half done, fold in the peanut powder and chilli powder (if any) and cook
until done. Stir well to prevent sticking and burning at the bottom.

Serve with chapatis and/or pilaf.

Well, you could use another leafy vegetable. But I, like you, don't
really like beets and I prefer dishes were they are blended in with
some other prominent taste. White wine, you say. That sounds good.

In the meantime, Michael posted a recipe with... peanuts. Apparently
somebody else liked that combination :-)

How about this:

Grate som beetroot and some carrots into a salad bowl. Add chopped
celery, fennel seeds,
raisins (or sultanas), sunflower seeds, fresh herbs and juice of
freshly squeezed lime, lemon or
lemon+orange.

If you're a juicer: add beets when you juice carrots for a
different, sweet taste, and a little more color!

Grill beets.

Pickle beets.

Juice them. I often throw a couple beets in with carrots, celery, and
spinach. As for recipes, I like them pickled overnight (or over a few
nights) and thrown into salads or by themselves. They're also nice roasted.
