Vegan (alt.food.vegan) This newsgroup exists to share ideas and issues of concern among vegans. We are always happy to share our recipes- perhaps especially with omnivores who are simply curious- or even better, accomodating a vegan guest for a meal!

Default newbie needs recipes

I am not totally vegetarian, but am about 80% vegetarian for the past month
(lost 10lbs). I am a single guy, college teacher, and I cook meals that do
not require lots of fancy schmancy steps and time. I could sure use a few
easy recipes to help me out, if anybody has anything to share.

Thus far I basically eat for BREAKFASTS: oatmeal with added flaxseed fiber
(fills me up to help with wt loss), FiberOne cereal, eggs and fake
(vegetarian) bacon. LUNCHES: soup, BLT sandwich using fake bacon, herring
or salmon with bread and hummus. DINNERS: my mainstay is stir-fry veggies
with Tofu in peanut sauce.

I have been buying the Thai peanut sauce-- if anybody can help me make one
easy from scratch, and also find a way to make firmer Tofu from the plain
Tofu that would be great. I have been paying a premium to buy the Tofu that
already is Thai peanut flavored, to also add to a Thai peanut sauce I buy.

Have you tried freezing it and defroting it? Freezing somehow alters the
texture of the tofu.

Please do not let the word "vegan" in it scare you.

The information applies just as much to vegetarians as
vegans. Just add milk and eggs if that is what you are into.

Vegan Outreach will mail you a very nice printed copy for
free. You can also download a pdf version for free or read
it on the web for free.

The kit includes unique and thoughtful essays by
Vegan Outreach founder Matt Ball that will help you
make vegetarianism a rewarding and lasting committment.

It has a better recipe section than most starter kits that
I have seen. Best of all it also has an up to date,
complete, easy to understand, and brief nutrition section by
Jack Norris, a vegan Registered Dietician.

Assuming you have a solid reason for starting veg*nism
the two best things you can do to make your commitment to it
last is to learn good nutrition and to learn to cook a small
set of recipes you really like.

Vegan Outreach also hosts a web site of health articles

I would ignore the nutrition advice from other veg*n sites
on the web.

There are a number of web mavens who sound as if they know what
they are talking about and they really don't. There are also
people who I call "food cultists" who recommend certain types of
vegetarian diets that have no basis ethics and no grounding
in nutritional science ( though they will make things up ).
Unfortantely some "food cult" advice can also be found on some of
the Animal Rights sites out there.

Animal Rights sites also frequently give incomplete nutrition
information because they believe if they give people too much
information will turn them off from trying vegetarianism. Many of
these sites also have out of date information.

Vegan Outreach takes the philosophy that if they tell people what
they need to know to be healthy and feel great as vegans that these
people will not quit being vegans and that the total number of
vegetarians will increase.

Sigh. As per my original post, what I am really seeking
help on is just a few staple recipes for this single guy
who is not into fancy recipes. I would be overwhelmed
looking at lists of recipes sites, long lists of recipes.
I just want another simple breakfast, another simple
lunch, another simple dinner. That would get me through
another couple of weeks.

Wouldn't freezing and thawing tofu soften it? I am wondering
how to make it more firm.

No. If you freeze firm tofu it takes on a fluffier/fiber like texture
when it is thawed. A co-op I used to work in used to do this to tofu
before using it to make fake turkey salad.

Might I suggest... The Accidental Vegan
by Devra Gartenstein easy recipes using common supermarket ingredients.

For an easy Peanut Sauce try Natural Peanut Butter, soy sauce, water and
cayenne pepper.

Tahini Sauce: equal parts Tahini, Lemon Juice and water.

What type of food do you like? I'll have a search through my basic recipes
to see if there is anything that might tempt you.

Thanks Sarah. I am surprised at how much I am liking Tofu-- so anything with
that. Love shrimp and I do not mind paying the buck$ to buy the big shrimp
(at this point I am not pure vegan, I still eat seafood and meat on
occasion but I am finding less need and less desire to eat meat-- the taste
of stir fry with peanut sauce and Thai spices and tofu is better than meat
dishes!). Lunches are tough-- wish I had more variety. I had some Amy's
canned spicy chili last night that was good. Trying to minimize carbs with
high glycemic index (for wt loss) so prefer NOT to eat potatoes or corn or
corn syrup. Love salads in warm weather (I am in Duluth MN so right now my
appetite for salads is minimal).
