Default Red Cabbage with Sake on Rice Noodles

Red Cabbage with Sake on Rice Noodles - Amanda Grant

2 tbsp sesame oil
2 garlic cloves, crushed
1 red cabbage, finely sliced
8 spring onions, finely sliced
5 carrots, finely sliced
5 celery sticks
4 tbsp soy sauce
4 tbsp sake
350g (12oz) rice noodles
1 bunch of chives, finely chopped to serve

Heat the sesame oil in a saucepan. Add the garlic, cabbage, spring
onions, carrots and celery and sauté over a moderate heat for 10
minutes until the vegetables are soft. Stir in the soy sauce and sake
and simmer, covered, for a further 15 minutes or until the vegetables
are cooked to your taste.

Meanwhile, cook the rice noodles according to the instructions on the
packet.

Transfer the noodles to a large warm bowl, spoon the vegetables on
top. Scatter fresh chives over the top. Serves 4.
