I'm far from a vegan but I have a serious ? here.
I just take a whol bunch of veggies and cook in a large cast iron pot,
onion, eggplant, carrots, beets anything you can think of. Is it
healthy to microwave to reheat these veggies doesn't it kill some of
the nutrients?

Also the leaves fron the beats and radishes and such can they just be
addd th the pot and eaten also?
