"Cook's Illustrated" Chimes in On Iced Tea Recipes

Their suggestion violates at least one quasi-absolute rule many of us obey
<g>. They place tea bags in water and bring it to just short of a boil,
steep for three minutes and remove.

Their observation is that Assam teas and water with high mineral content are
a major cause of clouded iced tea. They use "store bought" tea bags.

Personally, I've never understood the caution about clouded iced tea. If it
tastes good, it is good.

For those of who subscribe to the magazine, this item will be in the next
issue.

Warren,

I see your point, but I beg to differ. I came to tea from pottery, not the
other way round. For me, the eye, the nose, the mouth, and the ears work
together in this. Besides, I *think* I perceive that I sense that there
might be a taste difference between clouded and unclouded iced tea.
Different strokes for different folks. That's what makes the world go round.
