I originally used to do what this page does, namely soak in salt water, sake, then remove the skin. After a few years of this, I changed my method to skin first, then soak. The skin while thin is pretty tough, and in terms of leaching out blood, the skin won't let it pass out into the salt water. Nor will it let the sake soak into the Ankimo. When I skinned first, I found that most of that "bad smell" you get when steaming disappears. Anyway, everyone has their own recipe so there's no "right" or "wrong". M |
