same starter different sour
I started with the same starter now I have two obviously different "sour".
The aroma of one jar is very sour and the other mild. I am about to make a couple of loaves from the real sour one. I will let you know if it's palatable. The other smells much like the original. I only add flour & water with a pinch of sugar to replenish. Could it be that I have been using bleached flour? -- "Life is not a journey to the grave with the intention of arriving safely in one pretty well preserved piece, but to skid across the line broadside, thoroughly used up, worn out, shouting GERONIMO !"
