Default same starter different sour

I started with the same starter now I have two obviously different "sour".
The aroma of one jar is very sour and the other mild. I am about to make a
couple of loaves from the real sour one. I will let you know if it's
palatable. The other smells much like the original. I only add flour & water
with a pinch of sugar to replenish.
Could it be that I have been using bleached flour?
