Default how to get a rise


Last night I made two loaves using my usual sourdough starter but also,
due to time restrictions, added some dry yeast. The result was very good,
the dough rose very quickly and amply. What is the best way to make bread
rise a lot just with sourdough aone?

Get yourself one of those cheap 18 quart countertop roaster ovens (Wal-Mart
is selling them now for $28). Use it as a warming drawer. Shoot for 90F.
When you get tired of regular sourdough you can make Samartha's 16 hour,
water bath, pumpernickel in it.

Use very active starter. You get very active starter from a 3 or
more stage build from storage leven to the amount of start needed
for the recipe.

Are you talking about a toaster oven or something different? I am interested
in this as it is either too hot beside the stoves for rising or too cold
away from it
