Molasses Date and Nut Bars (Recipe 1 of 3)
 
Molasses Date and Nut Bars (Recipe 1 of 3)

Ingredients:

1/2 c. shortening
1/4 c. sugar
1/4 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
1/2 c. chopped nuts
2/3 c. molasses
1 egg
1 1/4 c. flour
1 c. finely cut dates

Directions:

Preheat oven to 375 degrees. Grease a 9-inch square pan. Cream
shortening
and sugar: add egg and molasses. Combine all dry ingredients, mix
well. Add
dates and nuts. Spread in pan and bake for 25 minutes. Cool.

Glaze...

Ingredients:

3/4 c. confectioners' sugar
4 tsp. water
1 T. grated orange rind

Directions:

Mix glaze and spread on baked squares, then cut into bars.

Orange Iced Date-Nut Bars (Recipe 2)

Ingredients:

1/2 c. butter, softened
1/2 c. sugar
1 egg
1 tsp. grated orange rind
1 c. flour
1 tsp. baking powder
1/4 c. chopped pecans
1/4 c. chopped dates
Pinch of salt
1 T. orange juice

Directions:

Cream butter and sugar. Add other ingredients and mix well. Bake in
8x10-inch greased and floured pan at 350 degrees for 25 minutes.

Icing...

Ingredients:

1 c. powdered sugar
1 T. soft butter
1 tsp. grated orange rind
1 T. orange juice

Directions:

Mix in small bowl. Ice the bars when they are cool. May be cut into
small
cookie size or large dessert squares.

Noel Cranberry Date Bars (Recipe 3)

Ingredients:

1-12 ounce pkg. cranberries
1-8 ounce pkg. chopped pitted dates
1 tsp. vanilla
2 c. flour
2 c. rolled oats
1 1/2 c. packed brown sugar
1/2 tsp. baking soda
1/4 tsp. salt
1 c. butter, melted
1 recipe orange glaze

Directions:

In medium saucepan, combine cranberries and dates. Cook covered over
low
heat for 10-15 minutes or until cranberries pop, stirring frequently.
Stir
in vanilla and set aside.

In large mixing bowl, stir together flour, oats, brown sugar, baking
soda
and salt. Stir in butter until well blended. Pat half the oat mix onto
bottom of 13x9x2-inch baking pan. Bake at 350 degrees for 8 minutes.
Carefully spread filling over baked oat mix. Sprinkle remaining oat
mix on
top. Pat gently. Bake 20-22 minutes more or until golden. Cool on wire
rack.
Drizzle with orange glaze. Cut into bars. Makes 32.

Orange Glaze...

Ingredients:

2 c. sifted confectioners' sugar
1/2 tsp. vanilla
2 to 3 T. orange juice

Directions:

In medium bowl, stir together confectioners' sugar, vanilla and orange
juice
to make a drizzling consistency.
