Basic Bean Soup

Basic Bean Soup

This is basic bean soup. It is easy to assemble and tastes great also. Try
adding other vegetables to taste if desired.

Makes 10 servings.

1 pound dry beans ½ pound chopped ham

8 cups water ¼ cup ketchup

12 baby carrots salt and pepper to taste

1 cup chopped onion

DIRECTIONS

1. In a large bowl, combine the beans with water to cover and let soak
overnight. This is not the water you cook them with unless you wish to.

2. In a large pot over medium high heat, combine the soaked beans with
water, carrots, onion and ham. Add more water to cover all, if necessary.
Bring to a boil, then reduce heat to low and let simmer for 4 to 6 hours.
Add ketchup just to get desired color. Season with salt and pepper to
taste.
