Basic Bean Soup
This is basic bean soup. It is easy to assemble and tastes great also. Try adding other vegetables to taste if desired. Makes 10 servings. 1 pound dry beans ½ pound chopped ham 8 cups water ¼ cup ketchup 12 baby carrots salt and pepper to taste 1 cup chopped onion DIRECTIONS 1. In a large bowl, combine the beans with water to cover and let soak overnight. This is not the water you cook them with unless you wish to. 2. In a large pot over medium high heat, combine the soaked beans with water, carrots, onion and ham. Add more water to cover all, if necessary. Bring to a boil, then reduce heat to low and let simmer for 4 to 6 hours. Add ketchup just to get desired color. Season with salt and pepper to taste. Basic Bean Soup This is basic bean soup.
