Bacon Potato Frittata
Source: “rigpig” – Chef2Chef forum member from Canada "Here is a dish that is just a little different - and most people should have these ingredients on hand - I have been making it for 20 years or more." Ingredients: 1/2 pound bacon 1 potato, sliced 1/2 onion, sliced 5 eggs 1/2 cup cream 1 1/2 tablespoons flour salt and pepper 1 tablespoon parsley Preparation: In a 7 inch frying pan, fry bacon, drain and save 2 tablespoons fat; remove bacon from pan. In same pan sauté potatoes and onions 10 minutes, or until tender, sprinkle with bacon. In a bowl, whisk eggs, cream, flour, salt and pepper and parsley. Pour this mixture over the potato/bacon mixture. Bake 450 degree for 15 to 20 minutes until puffed and golden. Note: I double the recipe and add more potatoes and less bacon and bake in a greased pie pan for twice as long. |
