Default Chicken pasta salad

Chicken pasta salad



- 1 lb. of boneless chicken breasts

- grilled chicken marinade (you can make your own

or I use Durkee Grill Creations for Chicken)

- 1 lb. of tri color rotini - cooked and rinsed

- 1/2 cup chopped carrots

- 1/2 cup sliced celery

- 1 chopped tomato

- 1 chopped cucumber

- 1 small bunch of scallions (green onions/spring

onions), sliced

- 2 bottles of lowfat balsamic vinaigrette dressing

- salt and pepper to taste

- Optional: diced or shredded cheese

- any other veggies you'd like to add



Marinate the chicken for about 1/2 hour. Prepare your grill. Cook

the chicken over medium heat until done. You can also do this in a

wok on the stove top if you'd like.



After the chicken is cooked, shred or dice it into bite size pieces.

In a large bowl combine all ingredients.



Put in the fridge for a couple of hours and enjoy.



This is reasonably low-fat if you use lowfat dressing and omit the

cheese. I usually bring it to bar-b-q's and it serves a lot of

people. An estimate of servings is 6 - 8 as a side dish.
