Gluten Free Cookies (3 Recipes)

Sand Tarts/Snow Balls

We love this gluten free recipe and would like to share it... thanks!

Ingredients:

3 sticks whipped or 1 8-oz tub margarine
2 c. GF flour mix*
1/4 c. powdered sugar
1 tsp. xanthan gum
1/2 c. pecans, grated
1 tsp. baking powder
1 c. powdered sugar to roll cookies after baking
3 tsp. vanilla

Directions:

Cream margarine and add vanilla. Sift dry ingredients and add to
first mixture. Mix well. Roll into 1-inch balls after adding nuts.
Bake on ungreased cookie sheet at 350 degrees until done in middle
(approx. 30 minutes). Roll warm cookie balls in powdered sugar.
Makes approximately 40 cookies. Baking time varies depending on the
size of balls.

*GF Flour mix: 2 parts white rice flour, 2/3 part potato starch
flour, 1/3 part tapioca flour.

Hi Michelle, I am submitting a couple of recipes I found in an old
newsletter called "The Gluten-Free Baker's Newsletter." I have no
idea if the newsletter is still in publication or not. This is the
winter 1995 edition, which had some great holiday recipes in it.
Someone gave me this newsletter, I have no need of gluten-free myself,
but had a friend who did. So I have not tried these recipes myself,
but they do sound good. Would also like to add that The Baker's
Catalogue (from King Arthur Flour) carries many of the specialty
flours and also some gluten-free baking mixes.

Super Chocolaty Crinkles

Ingredients:

1/2 c. vegetable oil
2 c. sugar
2 c. bean flour (Authentic Foods Bean Flour)
4 eggs
1/4 to 1/2 tsp. salt
4 squares baking chocolate, melted
2 tsp. vanilla
2 tsp. baking powder
1/2 to 1 c. powdered sugar

Directions:

Preheat oven to 350 degrees. Mix oil, sugar and chocolate. Blend in
eggs one at a time until well mixed. Add vanilla. Mix in flour,
baking powder and salt and blend well with chocolate mixture. Allow
dough to set for 5 to 10 minutes before proceeding. Shape
teaspoonfuls of dough into balls and roll in powdered sugar. Place 2
inches apart on greased baking sheets. Bake 10 to 12 minutes. Do not
overbake! Makes about 11 dozen cookies.

Chocolate Cookies with White Chocolate Chunks

Ingredients:

3/4 c. firmly packed brown sugar
1/2 c. sugar
1/2 c. butter or margarine, room temp
1/2 tsp. almond flavoring
1 egg, extra large
1 1/4 c. bean flour (Authentic Foods Bean Flour)
1/2 c. rice flour
1/3 c. baking cocoa*
1 tsp. baking soda
1/2 tsp. salt
6 ounces white chocolate baking bar, cut in chunks
1/2 c. coarsely chopped pecans

Directions:

Preheat oven to 375 degrees. Beat brown sugar, sugar, and butter
together until light and fluffy. Add flavoring and egg. Mix flours,
cocoa, soda and salt together; stir into sugar mixture and mix well.
Mixture will be crumbly but will hold together when pressed. Press
together by teaspoonfuls into balls and place 2 inches apart onto a
greased baking sheet. Bake 8 to 12 minutes or until set. Cool 1
minute before removing from baking sheet. Makes about 5 to 6 dozen
cookies.

* They left the amount of cocoa out of this recipe. My guess was
about 1/3 cup.
