1 1/2 cup flour 1 teasp. cinnamon 1 cup sugar 1/2 teasp. salt 1 teasp. baking powder 1 teasp. baking soda 1 cup grated carrot 1/2 cup crushed pineapple 2 eggs 2/3 cup oil 1 teasp. vanilla Combine dry ingredients, combine beaten egg, oil, vanilla, carrot and pineapple, Combine all together just until moistened. Spoon into muffin tins. Bake in 375 degree oven for 15 min. *Amount of sugar may be cut in half. Icing; Combine and blend 4 ox cream cheese, 1 cup icing sugar, 1/8 cup butter, 1 teasp. vanilla. Use this icing if you wish but they are just as good without. |
