Crema Di Zabaione

Amount Measure Ingredient -- Preparation Method

6 egg yolks
2 7/8 ounces sugar
1 3/4 ounces flour
1/2 cup whipping cream -- whipped
2 cups milk -- 1% or skim
1/4 cup dry marsala
1 vanilla bean



Ready, set, cook!



Beat eggs and sugar together until well blended. Transfer to a heavy
saucepan and set aside. Meanwhile bring milk to a boil with the
vanilla bean, allow to cool and filter. Add sifted flour to the egg
mixture and combine well, then add milk and Marsala. Over low heat,
allow to cook slowly, stirring constantly until it reaches the boil.
Remove from heat, transfer to a bowl and allow to cool stirring
occasionally. Fold in the whipped cream, spoon into individual serving
bowls and serve. Makes 6 portions.
