Microwave Strawberry Jam - Sunset Home Canning Cookbook


2 cups crushed strawberries
1 1/2 tablespoons lemon juice
1 1/2 cups sugar


Prepare fruit and flavoring; place in a 2-quart microwave-safe glass
measure or 2 1/2 to 3 quart casserole. Add sugar. Let stand until
juices
form (about 30 minutes).


Microwave uncovered, on High, for 6 minutes or until mixture begins to
boil. Stir well. Microwave on High, 10 to 13 minutes, stirring every 2
to 3 minutes. Spoon 1 tablespoon jam into a custard cup and
refrigerate
for 15 minutes to test for consistency. For thicker jam, reheat jam to
boiling and microwave on High for 2 more minutes; retest. Makes about
2
cups. Store in refrigerator for up to 1 month or in freezer for up to
1
year.
