Default Recipe of Shahi Paneer

Shahi Paneer is one of the most liked and famous recipes of Paneer (Cottage Cheese) in India. Shahi itself resembles ‘Royal’ and the recipes too contain a rich stuff to be enjoyed. The Shahi Paneer recipes have been modified over the past few years with different ways, but found one of the easiest ways in a recipe book and tried it. It was one of the best recipes of Shahi Paneer as compared to the different ways I had tried earlier. The recipe takes very less time to prepare and is delicious too.

Directions to prepare Shahi Paneer
Ingredients:
400 grams cottage cheese (Paneer)
1 teaspoon ginger paste
1 teaspoon garlic paste
2 large size onions
2 green chilies
1 bay leaf
2 - 1 inch cinnamon sticks
5-6 black pepper corns
3-5 cloves
Salt as per taste
10 cashew nuts
5 almonds
1/2 cup yogurt
1/2 cup cream
1 tablespoon garam masala
1/2 tablespoon cardamom powder
2 tablespoon oil

Preparation:
Cut the onions in quarters, separate the layers and let it boil in quarter cup of water. Boiling the onions in water will help in reducing the smell of onions from the dish. It will as well provide the dish with a smooth gravy and very less odor. Sieve the onions and then let them cool. Cut the Paneer to pieces of 1/2 inch to 1 inch. Slit the chilies in half. Make the paste of cashew nuts and almond by adding 4 spoons of water to it. By now the boiled onions would have cooled down. Make a paste of the boiled onions.
Cooking:
Place wok on a heat source, add oil to it and let heat. Add the bay leaf, cinnamon, cloves, black peppercorns and saute. Add the boiled onions paste, chilies and saute for next 4-5 minutes on low flame. Note, that the onion paste should be saute on low flame lest it will lose its color. Add ginger paste and garlic paste and saute for next 2-3 minutes. Add the cashew nut and almond paste and saute for next 3-4 minutes. Add the curd and mix till the water of curd is completely absorbed. Add garam masala, cream and saffron to it and stir. Add salt to taste. Add the Paneer (cottage cheese) pieces and stir gently. Let it cook for next 4-5 minutes. Sprinkle cardamom powder on it and garnish with fresh coriander leaves and serve hot with tandoori rotis.
You are now ready to serve Shahi Paneer with Tandoori Roti or Paneer Stuffed Tandoori Roti!!
