Sweet pongal
Sweet pongal or Chakkarai Pongal is a common food of South india, prepared on any special occasions, celebrations, festivals and specially on 'Pongal'
Recipe Summary Difficulty: Easy Prep Time: 10 min Cook Time: 30 min Yield: About8 Ingredients Raw rice - 1& 1/2 cup Moong dal - 1/2 cup Cashewnuts - 12-15 Pure ghee -1/2 cup Milk - 1 cup Raisins - 15 Jaggery - 2 cup(s) Cardamoms - 4 Preparation: 1. Wash and soak raw rice for 1/2 hour. Dry roast the moongdal lightly in a hot kadai 2. Grind cardamoms with 1 teaspoon sugar to a fine powder. ( Tips: cardamom will grind to a smooth powder when you grind with sugar) 3. Break the jaggery into small pieces and keep 4. Boil milk in a pan. 5. In a pressure cooker, add the washed rice, dhal, milk and 6 cups of water. Stir well and cook for 3 whistles 6. After 15 minutes, add jaggery to it and keep stirring to prevent it from sticking to the bottom. Keep cooking till all the jaggery melts completely and is thoroughly incorporated in the rice and dal mixture. Add half the quantity of ghee and continue cooking on low heat for about 5 minutes, stirring frequently. 7. Heat the remaining pure ghee in a small pan and roast the raisins and cashews and stir well. Add this to the cooked pongal. 8. Sprinkle the cardamom powder. Stir well and serve hot. This is the 'Chakkarai Pongal' (Sakkarai Pongal) |
