Khoya kaju masala (Carrot Sweet)
An awesome, delicious sweet, quite famous in almost every Indian household... Bet you guys will love it...
Ingredients 1.table spoons oil 2.A small piece of ginger 3.green chilies 4.10 garlic cloves 5.small pieces of cinnamon 6.cloves 7.1/4 tea spoon coriander seeds 8.tea spoon cumin seeds 9.to 3 onions (paste) 10.tea spoon dhana jeera POWDER 11.1/4 TEA SPOON TURMERIC POWDER 12.TEA SPOON RED CHILLI POWDER 13.tea spoon garam masala 14.piece tomato gravy 15.100 Gms. cashewnuts,magatari seeds, and khus khus paste 16.1 tea spoon butter 17.1 cup water 18.1/4 cup milk 19.table spoons mawa 20.table spoons fresh cream 21.1 tea spoon salt For Khoya kaju 22.cups white gravy 23.100 grams cashew nuts 24.ghee 25.cup cream Preparation For White gravy Mix ginger, chilles, garlic, cinnamon, cloves and cumin seeds. Grind all these ingredients to a fine paste. Heat oil in a Kadhai. Fry the paste for 5 minutes. Add onion paste. Fry again for few minutes. Add salt, dhana jeera powder, turmeric powder, red chili powder, and garam masala. Cook on a low flame till it becomes brown. Add the freshly pureed tomatoes. Cook till dry and oil separates. Add cashew nuts, magatri seeds and khus khus paste. Fry for another 4 to 5 minutes till oil separates. Add butter and enough water. Add milk when the mixture starts boiling. Stir constantly so that the milk does not curdle. If the milk curdles, then beat the gravy well with the hand mixer. Simmer on low flame. Add mawa and fresh cream. Mix well. Remove it from the flame. Method for Khoya kaju Heat the ghee. Fry the cashews in ghee till they become golden brown in color. Add them to the white gravy. Beat the cream well. While serving, add more cream. Serve hot.
